Clean Eating Lentil & Quinoa Salad

This is my last month posting as a Life Made Delicious blogger.  It’s been a fun year and being part of this has made me challenge myself a little more in the kitchen.  I began clean eating only this past November, and I started as a #LMDConnector in June of last year.

I love salads all year.  Finding protein that is not meat is not hard.  I know it’s a question that most vegetarians get.  How do you get your protein?  Well there are a lot of options.  Now I am not a vegetarian but I have cut down a lot on my meat consumption.  So one of my go to foods is legumes.  I love lentils.  They are so easy to cook.  My kids love lentils as well.  So I put together a quick recipe today just from what I had in the pantry and the fridge.

I started with red lentils.  The ration I used was one cup of lentils to three cups of water.  Bring to a boil and simmer for ten minutes

Next was the Quinoa.  One cup of dry to two cups of water.  Again bring to a boil and simmer for about twelve minutes.

I wanted to throw in a little extra flavor so I sautéed some sweet Vidalia onions in olive oil.

I cut up my veggies and added everything all together.

The dressing I used was a simple one.

1/4 cup of olive oil

1/4 cup balsamic vinegar

2 tbsp fresh oregano

1 tsp of sea salt

I mixed it all in and let it sit.  Not before taking a bit in a separate bowl for me.  I added some fresh chopped cilantro to my personal serving.

There you have a delicious salad for all year, but especially nice for the summer.  Lentils and quinoa are so simple to cook, it’s not hard to eat a little healthier if that is your goal.
