Clean and Green Irish Seafood Chowder

It’s St Patrick’s Day.  A day of fun and cheer, and of course for some green beer.  This month as a Life Made Delicious blogger one of the themes was green.  I wanted to make an authentic Irish dish.  Fisherman’s pie or Irish Seafood Chowder?  I went with the chowder. I have to say it’s probably the best one I ever made.

I started with Olive oil, onions, zucchini, celery, and carrots.  Sautéed until soft.I put those aside.

 Next was the mussels & shrimp.  I cooked them until I had a nice broth, added a little wine as well.  I then added scallops and filet of sole.

Once those cooked together in another pot I put back the vegetables to cook and added potatoes.

I added 2 cups of milk, using lactose free as my oldest daughter is intolerant.   I then added the seafood, mixed it all together letting it simmer.  Then I added fresh chopped spinach.

I also pureed some spinach in my vitamix which made the chowder green.  Perfect and delicious for St Patrick’s day.

Definitely a recipe I would make again.

I personally don’t like seafood, though I find not a ton of recipes online look as appealing as you made yours look. Great recipe post! You make it look easy.

I love this idea. I agree with Jodi, you do make it look so easy. :) I was surprised that my kiddos love fish chowder. It was one of those things that I just never thought of. Easy weekday hearty meal… thanks for sharing. Loving your clean eating ideas!
