I am happy that my husband recently joined me in getting healthy department. After seeing me stick to things over the holidays he is confident about Super Bowl temptations. Football is my husband’s thing. He used to play semi pro when we first began dating. I knew the basics of the game. When I asked what position he played he told me he was a tight end. I really thought my husband was playing a joke on me. Imagine my face when I learned it really was true. Here I was thinking he was subtly trying to tell me he had a firm behind. Oh boy did he laugh.
With Super Bowl just around the corner, healthy snacks are key and compliment any fitness regimen. I thought of many different things that are clean and opted for chickpeas. I love them and recently my favorite way to eat them is roasted. If you like hummus check out this great recipe at Life Made Delicious called Sweet Potato Hummus.
It uses a can but you can cook your own chickpeas.
Since I began clean eating the recipes I have tried have been delicious. I figured it couldn’t be hard to make my own roasted chickpeas. And really it isn’t. I decided to use whatever I had on hand. I hardly ever follow a recipe. I looked through my pantry I found cinnamon & chili powder. Great beginning. In the fridge I had lime and maple syrup. Yes I definitely knew what I was going to do.
I soaked my chickpeas overnight and cooked them for a few hours. A pressure cooker or slow cooker are other options to cook these lovely little guys. These are simple and affordable to make. Chickpeas are cooked once soft inside. A healthy food, packed with protein.
Once the chickpeas were cooked I separated them into two batches as I wanted to try two variations. On the first batch I added some olive oil, squeezed some fresh lime, added some chili powder, and a little salt.
I baked them at 350 but next time I’ll bake them at 300. I set the time for an hour, but checked every fifteen minutes.
End result? Delicious savory snack. I’ll definitely make these again, maybe add more lime and cilantro next time.
Next I wanted to try something sweeter.
I had some pure maple syrup and some cinnamon. I added some grape seed oil. mixed it all together. Spread it on my other stoneware baking pan. I decided to add some sea salt. Best idea ever.
These were really good. I can’t even tell you how good. You’ll have to try the recipe. The perfect snack, a little sweet, a little salty. Simply amazing. Everyone in the house loved them. Eating healthy is really simple. I think we’ve over complicated things. For me I am taking a step back to basics and thrilled to have found clean eating. There’s a problem with this recipe though. I really don’t think it’ll make it to Super Bowl Sunday.
