Last Friday my second daughter turned eleven. I remember that day so well. I remember the joy and the worry during my pregnancy. The concern that perhaps I would not have enough love or the same love for another child. With my first daughter I was consumed by the intense love I felt for her. It ignited such fierce feelings in me.
I had no need to worry at all. When my daughter Darcy came into the world, I felt that same love, in all its glory and intensity consume me once again. It was bigger too because we gave our two daughters a wonderful gift. Each other. My first daughter Camryn taught me how to be a mom. My daughter Darcy taught my heart it had the capacity to love and grow. Precious and priceless.
This year since I have been eating clean I wanted to make a healthier cake. I posted pictures to my Facebook page and a few of my friends wanted the recipe. My husband made the cake in his new Kitchenaid mixer. He knew I wanted a clean recipe. He found this recipe and modified it for me.
1 3/4 cups whole wheat flour
1 1/2 cup of raw organic agave
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup of lactose free milk-only due to my daughter’s intolerance
You can see my husband used olive oil, normally we don’t use olive oil for baking desserts, I find the flavor too strong. Grapeseed oil is a great one to use. It’s now on my shopping list. :)
I then threw together an icing recipe and added a topping.
I used my vitamix for this part. :)
3/4 cup of coconut butter
1/4 cup of organic raw agave
1 tsp organic peppermint
1/2 cup of cocoa
1/4 cup of water
I blended until it was nice and smooth. It came out more like a glaze, but as it sat it got a little thicker which was nice. I could honestly just put this in a jar and eat it whenever I have a craving.
Before it set I found it was missing something, I don’t use candy anymore but I really wanted a little extra topping. I chopped up some raw cashews and sprinkled them on top.
The end result. It was moist and the icing was delicious. Everyone liked it although my son found it bitter in some bites, which is probably the olive oil. The kids are used to homemade cakes but we used to use really sweet icing So I think I will tweak it a bit to get it just right in time for my son’s birthday in May. Still not bad for the first one.

Yay to eating Clean! Love that you used your vitamix. Do you use it a lot for soups and smoothies too?
There’s a nice alternative to Olive Oil (well butter is always yummy) but there’s organic Sunflower Oil from France that you can get from Sobey’s. Check it out.

I love my vitamix! Yes I pretty much use it for everything. I am still learning and experimenting with it, I only bought it this past November. I do use sunflower oil, and we had some on hand but for some reason my husband reached for the olive oil. Lol what can you do. It was pretty good.
